From El Tio: "Owner and head chef, Jesus (Jay) and his wife, Patty Barajas opened El Tio restaurant in Port Chester, New York in 1991 and El Tio in New Rochelle in 2004. Much of the cuisine in both restaurants come from his home town of Jalisco in Mexico. Jay's recipes are his own. He combines his enjoyment of his mother-in-law's cooking with recollections of helping around in his house in the kitchen as a boy.
"Jay enjoys his time in the kitchen and believes in making everything fresh and natural at El Tio. Shopping personally for both restaurants every day, He believes in quality, without forgetting to keep authenticity and flavor. Tacos, tostadas, quesadillas, flautas, tamales, sopes, bistec ranchero, camarones a la diabla, caldo de camaron, agua de horchata, etc. have remained classics in both restaurants."
