The Cafe at Mariani Gardens is located at 45 Bedford Road in Armonk, NY 10504 in Westchester County.

From Mark Mariani: "Come to my home and I’ll feed you. Why should my gardens be any different? For instance, could I interest you in our Garden Parfait? Then again, I probably shouldn’t even mention it until you finish your Kobe beef mini-burger, or sweet sopressata, cheddar and sundried tomatoes on olive loaf, or scallops with arugula, endive, and watercress in a passion fruit vinaigrette. Which are only some of the delights my chef comes up with after canvassing the surrounding area – and my orchard – for local produce, and on his daily jaunts into the city to visit his four favorite bakeries. Needless to say, more than your car may be stuffed when you leave my gardens. Which is perfectly o.k. – tomorrow, you can just stop by for our all-fruit smoothie."

Croton Creek Steakhouse & Wine Bar is located at 4 West Cross Street, Croton Falls, NY 10519 in the Town of North Salem, in the northeastern corner of Westchester County.

From Croton Creek: "This boutique, bistro-style restaurant retains its historic heritage with exposed brick interior walls, wooden beams, and other rustic design elements. While adhering to its historical past, Croton Creek has done what other restaurants haven't been able to do. They've brought a little bit of Soho-chic into this 275 year-old town exemplified by Venetian plastered bathrooms, faux-painted walls, modern and expressive lighting, and leather sofas and chairs in the wine bar.

"The design and character of Croton Creek is a feast for the eyes. The food, however, is a feast for the eyes as well as the taste buds. In addition to a wonderful selection of prime steaks, Croton Creek offers an array of other delicious alternatives, including Pistachio Crusted Lamb Chops with Root Vegetable Polenta Cake over Sautéed Kale with a Pomegranate Demi-glace, Pork Loin stuffed with Wild Mushrooms over Chestnut Puree with caramelized Baby Carrots and a Shallot Riesling Reduction, Day-Braised Beef Short Rib over Yukon Gold Mashed Potatoes with Butter Roasted Garlic, and Croton Creek's signature Swiss burger (beef or bison) standing six inches tall with frizzled onions, apple wood smoked bacon, and grilled tomato."

Mount Kisco Coach Diner, serving breakfast, lunch, and dinner, is located at 252 East Main Street, Mount Kisco, NY 10549 in Westchester County.

What is a Diner?
The traditional American diner originated in the 1950s and is usually shaped like a railroad dining car. Diners are casual roadside restaurants often located near a major road or highway. Traditional diners offer seating at the counter bar, at tables, and at comfortable booths often with a jukebox positioned at one side of the table.

Diners are often opened late into the evening and many are open 24/7. The diner menu is huge, offering breakfast, lunch, dinner, snack foods, desserts and a dozen sides. You can order scrambled eggs, toast, and potatoes in the evening and a burger in the morning, or fish dishes, pasta, salads, the list goes on and on. Follow your meal with a milk shake any time of day. Don't forget to order a freshly made cup of coffee. Many diners are great fun, the food is good, and the service is friendly, and the prices are affordable. Unfortunately, this does not apply to all diners today.

    Maple Tapping on the Farm
Late winter on the farm is a time of planning and preparation. It’s also maple-sugaring time! From late February to early March, Farmer Craig Haney is tapping sugar maple trees around the farm to collect their sap - the sweet stuff maple syrup is made from.

What makes this time of year the right time for maple sugaring? Farmer Craig explains during this transition from winter to spring, the temperature goes through great changes in short periods of time. The best conditions for good sap runs are when the temperatures drop below freezing at night and rise to the 40’s and 50’s during the day. This change in temperature causes pressure inside the tree that helps the sap flow more easily. Late winter on the farm is a time of planning and preparation. It’s also maple-sugaring time! From late February to early March, Farmer Craig Haney is tapping sugar maple trees around the farm to collect their sap - the sweet stuff maple syrup is made from.

From Chipotle: What is food with integrity?

Food With Integrity is a journey that started more than a decade ago and one that will never end. Through our ongoing commitment to finding better, more sustainable sources for all of the ingredients we serve, Chipotle is changing the way people think about and eat fast food. We call this effort "Food with Integrity" and it has us working with suppliers who share our commitment to raising food in ways that demonstrate respect for people, the environment and farm animals. We have always maintained a belief in being transparent about our supply chain practices.

  • It means serving the very best sustainably raised food with . . . great taste, great nutrition, great value.
  • It means that we support and sustain family farmers who respect the land and the animals in their care
  • When possible we use meat from animals raised without the use of antibiotics or added hormones.
  • And it means we source organic and local produce when practical . . We use dairy from cows raised without the use of synthetic hormones.
  • "A majority of the cheese and sour cream we serve at Chipotle comes from pasture-raised cows. This means that cows have daily access to outdoor pastures, are never given added hormones, and are fed an all vegetarian, plant-based diet. As well, we haven’t forgotten about pigs and chickens. Though the process is more complex, we are trying to find suppliers who can provide us with pasture-raised poultry and pork. Eventually, we want all of our meat to come from suppliers who meet these standards. We’re definitely working on it. Stay tuned."

From 808 Broadway: "The art of delicious food has shaped Salvatore Cucullo Jr.’s life. As a boy, he worked in his grandfather’s pizzeria, and later at a family owned restaurant. No one was surprised when Salvatore attended the Culinary Institute of America, followed by an externship at the exclusive Cafe des Artistes in New York. In May 2010, he and business partner Lynn Kozy opened The 808 Bistro, where every customer feels like a part of the family. Salvatore owner/chef says his cuisine is described as 'Italian without borders' with French , Asian, Mediterranean and Latin influences.

"Using only the freshest, predominantly organic ingredients, the menu’s updated frequently to keep it seasonal. 'I’m very passionate about food and believe as a chef that I’m never more important than my ingredients', says Salvatore. Traditional Italian chicken, veal and fish are always offered, and the restaurant accommodates special request. The bar uses fresh, muddled ingredients to make drinks, and suggested food and wine pairings are always on the menu."

From Cooper's Mill: "Cooper’s Mill brings food from farm to fork in a unique and social setting. We use locally and regionally grown and sourced ingredients as the cornerstone of our cooking. Our restaurant features hand-crafted booths and table tops fashioned from barn wood, and private dining areas are separated by custom-made sliding barn doors. Open dining spaces allow for a social setting.

Tarrytown’s history as a rich agricultural area stretches back to the early days of Dutch settlement and that tradition lives on at the Stone Barns Center for Agriculture in nearby Pocantico Hills where an extensive array of produce and locally raised food products are now produced. In fact, Tarrytown takes its name from the Dutch word for the area’s rich soil that was ideal for growing wheat. please join us for a meal as we build on these rich agricultural traditions at Cooper’s Mill."

Among the novel sandwich inventions is a nutritious no-mayo tuna salad, an original twist on a most-requested item. And perhaps most notably, production will dramatically increase to meet demand for the restaurant's most iconic offering, frozen yogurt.
      Forty Carrots Frozen Yogurt
      The Snack That Changed Snacking
Bloomingdale's on 5th opened Forty Carrots in 1975 to appeal to its fashion-conscious customers with low-calorie, healthy entrees served in an upbeat casual environment. To go along with its featured salads, sandwiches, homemade carrot and bran muffins, Bloomingdale's unveiled a new dessert it had discovered in New England, frozen yogurt. It was an instant hit, becoming the restaurant's #1 selling item, and remains so today 32 years later. The store estimates over 3.2 million servings have been enjoyed by legions of frozen yogurt connoisseurs, some of whom visit the restaurant four or five times a week.

As with any great recipe, the special formula for Bloomingdale's yogurt hasn't changed in the three decades since its launch. The healthful mixture is made unique by its abundance of active yogurt cultures, the only frozen yogurt so enriched, which gives Bloomingdale's original plain yogurt its distinctive slightly tart, lemony taste."

    100% Grass Fed and Finished

    Why choose Poppy’s?
Poppy’s is not just your average hamburger joint! Poppy’s is a farm to table meal experience that specializes in grass fed burgers. We source from Hudson Valley farms whenever possible and keep your dollars local. We are happy to have supported Hudson Valley organic farms for the past five years, employ 5 full time employees and make our home in the beautiful city of Beacon, NY.

We have stayed true to our mission since the day we opened our doors. Since we source so much of our food from Hudson Valley organic farms, the price point is a bit higher BUT your consumer dollars are staying within the Hudson Valley helping to support farms and local suppliers. Your support helps us to support our farming community and Beacon, NY.

    Why Grass Fed Beef?
Grass fed beef is not only a leaner choice of meat, but also contains a higher percentage of omega fatty acids. Grass fed cattle live in open farmland and eat grass, which their bodies process with ease. It has a distinct, clean flavor that melts in your mouth. We source from Sugar Hill Farm, Grayson Family Farm & J.Conover Farm.

    Explain my gluten free options?
We don’t have gluten free rolls at this time since we haven’t found the perfect fit yet! We will, however, prepare your burger without the bun and serve it over organic Hudson Valley grown Asian greens and homemade coleslaw. Additionally, our fries and chips are gluten free and so are our rice bowls. You can also order the salad without the croutons.

Why are your burgers cooked medium?
Grass fed beef has less fat content to it than your normal grain fed beef that you might find at the grocery store. To ensure a better flavor, the burger tastes best medium or medium rare, so that the beef does not dry out.

What kind of oil do you use?
    We use 100% vegetable oil.

    Where is your produce from?
Our produce is organic and local and from the Hudson Valley whenever possible. We source most of it from Obercreek Farm in Hughsonville, NY and Common Ground Farm in Fishkill, NY.

The promise we make to our customers is to provide them with the freshest ingredients that are seasonably available and do so by purchasing locally whenever possible. Local” gets thrown out there very often without any concept of what it really means. For instance, we shake hands every Tuesday with the man who makes our fresh hot dogs (Peter’s Meat Market), we drink espresso corretto with one of the local farmers we use for produce (Taliaferro’s Farm) and we are only a hop-skip away from one of the best cheese makers in the area.”

Like the décor, the menu showcases innovation: An extensive array of wines, handcrafted beers and unique cocktails complement our revolving seasonal menu."

"Since the 2006 opening of the restaurant, Charles and Megan Fells have played a major role in spearheading the resurgence of Poughkeepsie’s Main Street businesses. But their work does not stop there. They open their restaurant gallery to a new local artist every two months – and allow people to exhibit and sell works without taking any commission. The Artist’s Palate & Canvas are committed to buying all supplies and foods from local farms within a 70 mile radius whenever possible. As a member of the Hudson Valley community, they give back."

As its name suggests, The Artist’s Palate treats food as art, introducing new flavor combinations to local and regional diners. When it opened in 2006, the restaurant was quickly lauded by local and regional restaurant critics and discerning diners. The Artist’s Palate has fast become a Dutchess County institution.

From Bread Alone: "In 1983, Bread Alone Bakery started with one goal in mind: To bake wholesome and organic bread on the hearth of a wood-fired brick oven. At Bread Alone Bakery and Café & Restaurants, we continue our commitment to this mission, creating each artisan loaf by hand every day from little more than organic whole grains, water and salt. Our organic grains are grown in New York, the Midwest and Canada. Many of our dairy products are from local farms, and much of our fruit is picked seasonally from local orchards and then canned or frozen for year-round use."

    How We Started
"Living the Good Life' Scott and Helen Nearing wrote : “. . . We left the city with three objectives in mind. The first was economic. We sought to make a depression-free living, as independent as possible of the commodity and labor markets, which could not be interfered with by employers, whether businessmen, politicians or educational administrators. Our second aim was hygienic. We wanted to maintain and improve our health. We knew that the pressures of city life were exacting, and we sought a simple basis of well-being where contact with the earth, and home-grown organic food, would play a large part. Our third objective was social and ethical.”

Damon Baehrel aka The Basement Bistro, serving Farm To Table cuisine, is located at 776 Route 45 in Earlton, NY 12058, Greene County in the upper-Hudson Valley.

About Damon Baehrel: "Located in beautiful rural Greene County in the Upper Hudson Valley region of New York State, Damon Baehrel is a truly one-of-a-kind 20 seat restaurant/property. Located in the basement of Damon and Elizabeth Baehrel's home in Earlton, NY, Damon Baehrel (formally known as Damon Baehrel at The Basement Bistro) was established in 1989 to showcase their former catering business, Sagecrest Catering. The restaurant quickly took on a life of it's own, and has become a destination for food enthusiasts from around the world, who often wait several years to secure a reservation.

"Damon works completely alone in the restaurant, and on the surrounding 12 acre property, which is the ONLY source of ingredients, Native & Cultivated, that Damon utilizes in his original Native Harvest Cuisine. In addition to preparing dozens of varieties of his own homemade aged cheeses, cured meats, flours, vinegars, pressed oils, butters and breads on premise, Chef/Grower Baehrel hand prepares and serves every course of his daily changing multi-course Tasting Menu, which takes about 4-5 hours to experience, and is the only dining format offered. Damon also serves as the wine specialist and enjoys offering many hand crafted older vintages that are part of his collection.

"A large part of Damon's life is devoted to nurturing the source of all the restaurant's raw ingredients, and his Sagecrest Native AND Organic Gardens sustain the restaurant year round. By studying and observing what grew and thrived naturally on the acreage, and slowly adding hundreds of herbs, vegetables and fruits to the property, Damon now cultivates, grows, gathers, forages and uniquely preserves these organic ingredients for use in his original Native Harvest Cuisine. There is no other dining experience like this anywhere in the world."

    History of Damon Baehrel
"Chef/Grower Damon Baehrel is completely self taught: he has no formal culinary training or education. His sauces are organic vegetable based and free of butter and dairy. All sorbets, gelati and ices are free of sugar, and many of the charcuterie and meat courses are brined, cured and prepared over weeks and months without salting."

The word is This dining experience is out of the ordinary with many saying "the best meal I've ever had". Each course is superb accompanied by warm hospitality; the meal is prepared from produce on Chef Damon's farm with meat sourced from a neighboring farm. LocalHarvest is a leading informational resource for the Buy Local and Organic movement. We maintain a definitive and reliable "living" public nationwide directory of small farms, farmers markets, and other local food sources. Our search engine helps people find products from family farms, local sources of sustainably grown food, and encourages them to establish direct contact with small farms in their local area. Our online store helps small farms develop markets for some of their products beyond their local area.

The richness, variety, and flavor of our communities, food systems, and diets is in jeopardy. The exclusive focus on economic efficiency has brought us low prices and convenience through large supermarkets chains, agribusiness and factory farms, while taking away many other aspects of our food lives, like our personal relation with our food and with the people who produce it. More and more people are realizing this and actively working to turn the tide and to preserve a food industry based on family-owned, small scale businesses. They are our best guarantee against a world of styrofoam-like long-shelf-life tomatoes and diets dictated from corporate boardrooms.

The Buy Local movement is quickly taking us beyond the promise of environmental responsibility that the organic movement delivered, and awakening the US to the importance of community, variety, humane treatment of farm animals, and social and environmental responsibility in regards to our food economy.

By February 2011, they found themselves welcoming more than 150 guests to the gala opening of their new Hudson Hil’s Café & Market, which features only the freshest ingredients from New York organic farms. With the understanding that fine French cuisine requires a particular attention to detail, I set out to move away from the high volume format, to one which is more intimate and personal. Chipotle Mexican Grill is located at 1000 Palisades Center Drive, West Nyack, NY 10994 in Rockland County.

    History of the Canal House
1797 – Simeon DePuy, one of the most prominent citizens of High Falls, NY opened the Stone House Tavern.

1825 – Work on the Delaware-Hudson Canal began, a project destined to link towns from Rondout-on-the-Hudson to Honesdale, PA. Simeon DePuy, by then an experienced restaurateur, profitted well during this time catering to hungry and thirsty Canal workers.

1826 – The D & H Canal opened ushering in a new era of cargo transport that operated for over 70 years. Simeon DePuy’s eatery was the site of Lock 16. His business flourished as the canalmen, called the “roughest, toughest, fightingest” bunch of the profession, refueled at the tavern-on-the-water.

1870 – The D & H Canal entered a prosperous decade, which would be its last successful era.

1872 – 1,000,000 tons of anthracite coal were weighed through the locks at Eddyville. It was coal that gave the Canal its start. Ironically, it was coal that would force its closing. Since the Canal could not operate during the winter, America welcomed in the Great Railroad. Trains were able to move the coal quicker, cheaper, and in all seasons of the year. High Falls, a thriving community with five stores, five saloons, and two butcher shops, began to lose its luster.

1899 – The D & H Canal Company sold the Canal with all of its “franchises, rights and privileges” to Samuel D. Coykendall for $10,000. But within a few years, the Canal closed for good, with the “Ulster Queen” the last boat to make a scheduled run. The Canal, once the Interstate Highway of the 19th Century, became merely an unused, overgrown ditch.

1964 – John Novi, a D & H Canal history enthusiast and resident of High Falls, became interested in the old, stone building located at Lock 16. Seeing the “for sale” sign that was posted on the former Stone House Tavern, John Novi began negotiations to purchase the building with the help of his advisor, S. Snyder. The asking price had originally been $12,000. With a $500 loan from Snyder, Novi purchased the building for $4,500. Restoration, brainstorming and financing followed in the next few years.

1969 – After touring and working in Italy, John Novi came back to the States and opened the old Simeon DePuy Tavern as a restaurant on June 14, 1969. John, as chef, and a small staff operated the restaurant.

1970 – Craig Clairborne, the “New York Times” food critic rated the American Nouvelle Cuisine four stars, an achievement most restaurant owners can only dream about.

1973 – Novi and his staff moved into a new kitchen addition constructed from old materials: barn beams, street lights and urban renewal bluestone.

1974 – Final restoration is completed in the cellar of the Canal House with the opening of a wine and reception room.

1976 – America’s bicentennial celebration – John Novi, with the American Revival Organization and Canal Society, established a park commemorating it with the erection of a flag pole.

1985 – An article in “Time Magazine” on American cuisine called John Novi “the Father of New American Cooking”.

1994 – The TV Food Network named John Novi “The Father of American Eclectic Cuisine”.

    845-679-2108
Bread Alone Woodstock, an organic bakery and coffeeshop serving soups and sandwiches, is located at 22 Mill Hill Road, Woodstock NY 12498 in Ulster County.

From Bread Alone: "Nestled below Overlook Mountain with its tangle of hiking trails and look-out points, the town proper is known as much for the 1969 Festival that bears its name as it is for the arts colony that first birthed the tiny shops and galleries at the beginning of the last century. Our café serves as a crossroads of many kinds, and in some ways personifies Woodstock and its present laid back eclectic culture. With our organic, whole-grain bread speaking to the "back to the land" folks in the 70s, we might still be crunchy to some with our fiber-rich loaves, but with the continued perfection of our exceptional espresso, paninis and french macarons we are happy to be part of the evolution of Woodstock's palate.

"Whatever your reason for visiting Woodstock, make sure to stop by our cafe for a meal, snack, sweet treat or bread, of course! In addition, our kitchen will delight you with Feather Ridge Farm egg dishes such as the Hudson River Breakfast and the King Kaiser or more decadent options like Brioche French Toast with Spruceton Valley maple syrup and of course, our beloved Granola served with seasonal fruit and yogurt."
